Easy Recipes: Turkey Bacon Sharp Cheddar Sandwich

Each week at the grocery store I generally grab some deli meat. We like to have sandwiches a couple of days a week for lunch.

It never fails. The weeks I just buy half a pound- we run out and I have to make another trip for more.

The weeks I buy I pound, we do not get it eaten up in five days. I am terrified to eat deli meat after it has been in the fridge for five day. Call me crazy.

So I had some lunch meat I needed to use before it self destructed. These sandwiches were amazing!

This is a perfect dinner idea for a busy night when an easy recipe is in order!

Ingredients:

  • King’s Hawaiian Sub Rolls
  • 6 pieces of cooked bacon
  • 1/2 lb – 1 lb thinly sliced oven roasted turkey breast (I get mine sliced on a 5)
  • 6 slices of white sharp cheddar cheese slices
  • mayo an/or mustard
  • lettuce
  • tomatoes (if you want)

Put your mayo or mustard on each roll.

I cut the cheese slice in half and put one half over the mayo or mustard on each roll. This way there is cheese at the top of the sandwich and cheese at the bottom of the sandwich. Yum!

Top that with a generous amount of deli turkey

Take the bacon slice and cut it in half. (Have you ever tried pre-cooked bacon? Amazing time saver. Pop it in the oven or the microwave and it heats up in no time flat.)

Place the two halves on top of the turkey.

Top that with lettuce and tomato if you want.

I buy a bag of pre-cut Romain lettuce. I use part of the bag for our sandwiches and then save the other half of the bag and use it on another recipe later in the week like Bean and Cheese Tostadas.

Put the top of the sandwich on and you’re set!

We served this with clementine oranges and Popchips. Have you ever had Popchips? Oh man. Awesome!
