Weekly Meal Plan Ideas (Week 212)

The last two months I have been horrible about posting my meal plan. I think the last time I shared our plan was back in July.

Honestly, I started working out about 10 weeks ago. I have felt very uninspired to cook. I feel like everything I make is fattening or struggling to find the healthy balance for our family. Eat this. Don’t eat that. Only 25% of the results come from the workout- everything else is food and choices.

Then I feel like I am failing. You get it, right?

And then I have to remember that we can’t be so hard on ourselves.

And we’ve started a new school year so I have spent lots of time and energy on that.

Here is to better cooking and eating. Here is to finding the balance in healthy food AND things my kids will eat.

These are the easy recipes we are enjoying this week.

quinoa taco salad

Weekly Meal Plan Ideas:

Lime Garlic Butter Salmon– served with Parmesan asparagus and rice.

Western Meal– this is a beef and bean casserole that is super delish! This is an all in one dish and we serve it with avocado slices and tortilla chips.

Quinoa Taco Salad–  this is so light and filling all at the same time. I love, love, love this! Served with chips and salsa.

Lemon Sage Chicken– served with sauteed Brussels sprouts and a spinach strawberry salad.

Crockpot Mediterranean Chicken– this is one of my very favorite slow cooker meals! Love it! Served with rice and a salad.

  1. These look like great meal ideas. I’ve been struggling with the same thing. Then on top of that I have picky eaters. Especially my husband. He doesn’t eat everything.
