How many of you have Christmas dinner leftovers to use up this week? My youngest brother and sister-in-law hosted Christmas dinner this year, so I have no holiday leftovers to utilize. But I have a very easy menu planned for the week.

Egg and Cheese Breakfast Sandwiches– isn’t breakfast so fun for dinner? I think my kids and husband will really like this. I am not a fan of egg sandwiches but they are. More reason for me to stay focused on my Nutrisystem diet.

Chicken Pot Pie– family favorite. I love all in one meals and this cold weather is the perfect time for me to use the oven.

Tex Mex Wraps– this is using roast made in the crockpot and then you shred it and add salsa and corn. Tasty for sure! Serve with some rice and dinner is done.

Crockpot Chicken and Wild Rice– easy peasy. Served with a veggie and dinner rolls.

BBQ Salmon– baked and super easy. Served with cous cous and a dinner salad.

Leftover Buffet– use ’em up!
