Weekly Meal Plan 125

I think Spring is here to stay in North Texas. The weather has been gorgeous- perfect for baseball games! Cooler mornings and by afternoon you’re in shorts.

I have a pretty easy meal plan this week. Last week I did not get a meal plan pulled together and we ended up eating out way too much. Not good for my diet or my kids. (Hate it when that happens, but sadly it does.) Can I blame it on 4 ball games and 4 practices in one week? Remember, we have three kids playing baseball right now.   Not to mention we traveled to see one of my nephews games during the week. My kids LOVE baseball- playing it and watching it.

Here is what I am feeding my family this week.

Quinoa with Lime Rice and Corn– this looks so easy, budget friendly and yummy. My kids like to eat one pot meals like this. I will likely serve some fresh fruit with it- like watermelon.

BLTs and Soup– how easy is that?

Creamy Crockpot Chicken– I have an idea in my head. It includes chicken, cream cheese or heavy whipping cream, red bell peppers and some white cooking wine. Served over pasta.

Zesty Crockpot Chicken– this is so easy and a great way to cook a whole chicken in the crockpot. I will serve it with Puerto Rican rice or quinoa and a dinner salad.

Chicken Nachos– using the leftover chicken from the zesty chicken and lettuce and tomatoes from the BLT’s. Similar to how we used up the Lentil Taco leftovers and made nachos.

Leftover Buffet– use ’em up!
