Weekly Meal Plan 126

Allergies are bad here in our neck of the woods right now. Everyone is suffering. This is the only bad thing about Spring in North Texas.

With that said, we must eat. Here is what I am feeding our busy family this week.

Black Bean and Corn Quesadillas– this is an excellent way to use up leftover meat- I am using leftover pulled pork that my SIL made at a cookout. This meal can be on the table in 30 minutes or less. I serve it with yummy Puerto Rican rice.

Italian Crockpot Chicken– served with noodles and a dinner salad. This is such a great alternative when traditional spaghetti and meatballs become boring.

Crockpot BBQ Teriyaki Chicken– this looks so yummy and super easy. I am going to use chicken breasts because that is what I have on hand. Served with mac and cheese and a veggie.

Garlic Chicken Quinoa– I purchased  a 4 lb. bag of quiona on Amazon last week. Looking forward to some yummy recipes.If you have any quiona recipes to share, I am all ears!

Hot Dogs– I hate hot dogs. Everyone else in our house loves them. I lose. No biggie since I am still dieting. And it is a really easy dinner option. Served with chips and fruit. Did you know you can cook hotdogs in the crockpot?

Leftover Buffet– use ’em up!
