If you walk outside right now in Texas the heat will take your breath away. It is miserable here right now. By two o’clock in the afternoon you do not want to go outside.  It is yucky until about nine o’clock at night.

Heating up the oven for more than 20-30 minutes is not something I am willing to do. My house gets too hot and the ac is running non-stop.

This week is a limited cooking at my house and a very easy meal plan.

Weekly Meal Plan

Buttered Herb Salmon– I will either grill these or I might bake them in the oven. It will only take about 20 minutes in the oven, but still it will just depend. Served with rice or couscous (I have both on hand) and a steamed veggie.

Crockpot Stirfry– super easy! Served over rice and with a side salad.

Cheese and Chicken Quesadillas– we made these Sunday night. Super easy. I even used a rotisserie chicken to make it even easier. This is cooked on the stovetop so no heating up the house with the oven. Served with Puerto Rican Rice. Yum!

Bean and Cheese Burritos– I will not bake these. I will warm up the tortillas beans on the stove top and plate them right as I stuff them. Served with leftover Puerto Rican Rice.

Beefy Mexican Casserole in the Crockpot– you read that right. I am going out on a limb here. I will let you know how it turns out. Served with homemade guacamole and chips.

Leftover Buffet- use ’em up!
