Weekly Meal Plan: Meal Planning During the Holidays
During the holidays we might find it unimportant to meal plan because we have a “short week”.
Here is my solution: utilize the leftovers and sale items!
For example, we are having Tex Mex food Christmas Day, but I am pretty sure ham will be on sale at the grocery store. I have over 20 ham recipes for maximizing that resource.
Here is what I am feeding my family this week if you are looking for some ideas.
Monday we are traveling home from San Antonio. We will arrive home just in time to meet at my brother and sister-in-laws house and make pizza and cookies with the kids for dinner. This has become a tradition for us each year before Christmas Day.
Tuesday is Christmas Day and we are having dinner at my brother’s. Tex Mex food to be exact. I am taking Puerto Rican Rice and Crockpot Pinto Beans.
Ham and Cheese Pasta Bake– utilize the ham sales at the stores. Served with a dinner salad and rolls.
Crockpot Hashbrown Casserole– breakfast for dinner and use up the ham!
Easy Taco Salad– this will be perfect to go with any leftovers from Christmas dinner. I seem to be the only one who wants leftovers and knowing my mom she will make far too much taco meat.
Leftover Buffet– I am sure there will be plenty of things leftover. Make it work.
