Yummy Veggie Cheese Lunch Muffins

Are you stuck in a rut with lunch and snack options for your kids?

We encourage our kids to live a healthy lifestyle and I am betting you do the same. Filling their bellies with junk is always something I try to avoid.

I am so exited to share with you this quick, easy and yummy lunch idea. (And we also have some fun snack options to share too!)

Ingredients:

  • 2 c self rising flour
  • 3 eggs
  • 1/2 c milk
  • 1 c carrot, grated
  • 2 c zucchini, grated
  • 1/2 c onion, grated
  • 1 1/3 c cheese, grated
  • 4 T butter, melted
  • 1 teaspoon salt
  • 1 T fresh thyme

Gather up your ingredients.

In a marge bowl mix the flour, egg, salt, and butter.

Stir until well combined.

Add in the grated veggies.

Stir in the cheese.

Add in the thyme that has been removed from the sprigs.

Stir, stir, stir until well combined.

Line your muffin tin with liners.

Full each liner half full with muffin batter.

Pop them in an oven that has preheated at 350°. Bake for 25-30 minutes, or until a fork comes out clean.

WARNING: these smell amazing while they’re cooking.

I served ours with some butter while they were still warm.

These make a perfect lunch muffin, or even a savory breakfast muffin. (You could add bacon for a breakfast option!)

These would also make a yummy afternoon snack.

Speaking of yummy snacks, I know I have shared with you before that I keep a snack bucket in our pantry and a snack drawer in the fridge.
