Instant Pot Vegetarian Chili

This delicious vegetarian chili recipe is made in the Instant Pot, and it’s perfect for a quick and easy weeknight meal.

INGREDIENTS:

– Vegetable broth – Bell pepper – Carrots – Black beans – Pinto beans – Lentils – Corn – Cumin – Tomatoes – Cayenne pepper – Tomato paste – Sour cream – Cheddar cheese

Pour vegetable broth into inner pot of Instant Pot.

Add bell pepper, carrots, black beans, pinto beans, lentils and corn.

Stir so that all veggies and beans are submerged in broth.

Top off with cumin, cayenne pepper, crushed tomatoes and tomato paste.

Set to manual high pressure for 15 minutes then allow for a 10 minute Natural Pressure Release.

Top with garnishes of your choice like sour cream, cheese, etc. Serve and enjoy!
