Four Bean Goulash
  • 1 lb hamburger meat
  • 1 small onion, chopped
  • 1 clove garlic (or a spoonful of the jarred stuff)
  • dash of olive oil
  • 1 pk taco seasoning
  • 1 pk dry Ranch dressing mix
  • 1 can pinto beans
  • 1 can garbanzo beans
  • 1 can black beans
  • 1 can red kidney beans
  • 1 can Rotel
  • 1 can regular diced tomatoes
  • 1 cup frozen corn
  • 1 cup uncooked macaroni (You could use up to 1½ cups)
  • 1 cup water
  1. Use a large cooking pot. Add a bit of olive oil and brown your hamburger meat with the chopped onion and garlic.
  2. Once the meat is brown, add the Ranch and taco seasoning packets.
  3. Stir well.
  4. Add a can of each of the beans. I did not drain any of them.
  5. I also add the corn at this point. Just toss it in there.
  6. Add both cans of tomatoes, undrained.
  7. Toss in the macaroni.
  8. Add one cup of water. Stir to mix everything up really well.
  9. Bring the mixture to a boil for about 7 minutes.
  10. Reduce to simmer for 20-30 minutes.
  11. When the liquids evaporate, you're just about done.
  12. Add a cup of cheese. Mix well.
  13. Now you're ready to serve. Plate it up (we served it in bowls).
  14. I topped them with a dollop of sour cream and a bit of cheese.
