Slow Cooker Sweet Potato Chicken
An easy weeknight, crowd pleasing meal!
  • 6 chicken breasts
  • 1 onion, peeled and sliced
  • 4 sweet potatoes, peeled and diced
  • 4 large carrots, peeled and sliced into circles
  • 3 T maple syrup
  • 3 T olive oil
  • 6 sprigs of fresh thyme
  • salt and pepper to taste
  1. In the bottom of the slow cooker add the slices of onion, the diced potatoes and the carrot circles. Pour the maple syrup over the carrot, sweet potato and onion mixture. Place the chicken breasts on top. Drizzle with the olive oil. Sprinkle with the salt and pepper. Lay the thyme sprigs on top of the chicken breasts.Cook on high for 6 hours and then leave it on warm until the rest of your dinner is ready.
