Easy Corn Casserole

  • ½ cup butter
  • 1 (16 oz.) can whole kernel corn, undrained
  • 1 (16 oz.) can cream-style corn
  • 1 (8oz.) container sour cream
  • 1 cup grated cheese (cheddar rocks!)
  • 1 (8 oz.) box Jiffy corn muffin mix
  • Pam Cooking Spray (or equivalent) for spraying your baking pan
  1. Dump the box of muffin mix in a mixing bowl.
  2. Open your cans of corn. One cream-style and one regular. This is key.
  3. Dump the cans of corn and all remaining ingredients into the mixing bowl.
  4. Stir well to combine. I like to use a whisk.
  5. Spray the bottom of a pie plate or an 8x8 baking dish with non-stick cooking stray.
  6. Pour the corn casserole batter into the dish.
  7. Pop it in a 350 degree oven and bake for 40-45 minutes, or until the top is golden brown.
  8. When you remove it from the oven, let it set for about 10 minutes or so, letting it cool and firm up a bit.
  9. Enjoy!
