Instant Pot Chocolate Lava Cake
  • 1 tbsp white sugar
  • 1 stick unsalted butter(cut into pieces)
  • 4 oz semisweet chocolate chips
  • 1 cup powdered sugar
  • 2 eggs
  • 2 egg yolks
  • 1 tsp instant coffee
  • 1 tsp vanilla extract
  • 6 tbsp all purpose flour
  • ΒΌ tsp salt
  1. Grease four 6-8oz ramekins and coat with sugar and set aside.
  2. Melt the chocolate and butter in a microwave safe bowl for 1 minute.
  3. Stire and repeat every 15 seconds until chocolate is melted and smooth.
  4. Stir in powdered sugar.
  5. Whisk in eggs and yolks, coffee, and vanilla.
  6. Stir in flour and salt.
  7. Spoon equally into ramekins and cover with foil.
  8. Pour 2 cups of water into Instant Pot liner and add trivet to the bottom.
  9. Place 3 ramekins on the trivet and stack the 4th on top.
  10. Lock Instant Pot lid and set vent to sealing.
  11. Select Manual/Pressure Cook for 7-9 minutes.
  12. When Instant Pot countdown finishes, release pressure completely.
  13. Remove ramekins carefully(they will be hot).
  14. Dust with powdered sugar and serve immediately.
