How to Make a Chocolate Chip Cookie Cake

First you want to preheat oven to 350 degrees.

Spray the cake pan with cooking spray. I love this one. Then set it aside.

In a medium bowl whisk together the dry ingredients;  flour, baking powder and salt until well combined. Then set it aside.

Using a standing mixer on medium speed, cream the room temperature butter and sugar until they are light and fluffy.

Beat in the eggs, 1 at a time until combined well.

Now, mix in the vanilla extract.

Now you want to alternate adding flour mixture and milk until all is added and well combined.

Gently fold in the chocolate chips using a rubber spatula.

Now it’s time to add it to the pans. Divvy the batter into three round cake pans.

Bake them for 30-35 minutes or until a toothpick or butter knife comes out clean.

Once they are done remove them from the oven and let them cool in a baking rack.

What I like to do is let them cool in the pan for 15-20 minutes before removing from pans.

Then I turn them upside down and turn them onto a cooling rack to allow them to cool completely.

Now let’s ice them.

How to Make Chocolate Chip Icing

In your standing mixer on medium speed, cream the brown sugar, powdered sugar and softened butter until well mixed.

Add in the vanilla extract and continue on medium speed.

Now you want to gradually beat in the flour until well mixed.

Slowly beat in the milk until the consistency is thick but spreadable.

Finally fold in the chocolate chips using a rubber spatula.

How to Make Vanilla Icing

Using your standing mixer again, beat together all ingredients until combined, smooth and spreadable.

This will take about five minutes using medium speed.

How to Decorate a Chocolate Chip Cookie Cake

Using a cake leveler, cut the domes off of each round cake.

Place one cake layer onto a 12 inch round cake board.

Scoop out about a cup and a half of the chocolate chip frosting onto the cake slice and smooth evenly with a angled spatula.

Now add the second cake slice onto the layer you just frosted.

Frost it with another one and a half cups of chocolate chip icing.

Place the last cake slice on top of the layer you just iced.

This time you want to use the vanilla icing. Use about two cups worth and frost the top of the cake until it is smooth using an angled spatula.

Now you can frost the sides of the cake. Using a rotating cake turntable might be helpful.

Take the remaining icing and put it into a piping bag and add dollops to the top of the cake, like we did in the images shared in the post.

For fun add a chocolate chip cookie into the frosting dollops.

Enjoy with a huge scoop of your favorite ice cream with a slice of the chocolate chip cookie cake!
