In a large bowl, add your shredded or diced cooked meat. Toss in the black beans, corn, Rotel, and sliced olives. Stir until combined.
Place one flour tortilla on a griddle over medium heat. Add shredded cheese to half of the tortilla; the melted cheese helps seal the tortilla.
Add meat and bean mixture on the cheese. Top with more cheese, using only one half of the tortilla.
Fold the tortilla over and press with a spatula. Cook each side for 3-5 minutes until lightly browned and the cheese melts, securing the tortilla.
Once both sides are browned, remove the quesadilla from the griddle and cut it in half. Serve with rice, garnished with salsa, sour cream, and guacamole.
