Quinoa Taco Salad Recipe

If you’re new to quinoa recipes, this is one of the most natural, protein and fiber rich whole grains you can eat. It is gluten free and wheat free. It is an excellent meat substitute.

INGREDIENTS:

– Quinoa – Chicken broth – Gandules beans – Taco seasoning – Taco salad toppings

In a large pot combine the quinoa, broth and taco seasoning and rained cans of beans.

INSTRUCTIONS:

Bring to a boil over high heat. Lower to a simmer, pop a lid on it and let it sit for 15-20 minutes or until all of the liquid is gone.

While the quinoa is simmering, chop and prepare your salad toppings.

Stir it up to combine well. Put a heaping of the quinoa and bean mixture into each bowl.

Top the quinoa with your salad toppings.
