Cheesy Roasted Tomatoes

Here is a super easy recipe that went perfectly. Three to four whole tomatoes really can go a long way when you slice them, season them and roast them in the oven.

INGREDIENTS:

– medium-large vine ripe tomatoes – olive oil – Italian Seasoning – Italian blended cheese, shredded

Place your tomato slices on a cookie sheet about half and inch a part from one another. Drizzle them with olive oil. 2-3 T should be enough for all of the tomatoes.

Sprinkle each slice with a few shakes of Italian Seasoning.

Top each tomato with your favorite shredded Italian blend of cheese. I used a Mozzarella and Parmesan blend. It was perfect.

Pop it in the oven on 450 degrees for 15-20 minutes, until the cheese is bubbly and brown.

Serve 2-3 slices as a side on each plate. These went perfectly with a Chicken Marsala recipe we made recently.
