Mexican Chicken Corn Casserole

Mexican Chicken Corn Casserole is a creamy, cheesy mix of chicken, corn, and spices, topped with golden, bubbly cheese. Perfectly hearty and flavorful!

INGREDIENTS:

– 1 1/2 Cups Cooked Chicken, chopped – 2 Cups Cooked Rice – 1 1/2 – 2 Cups Corn – 1/2 Cup Tomato Sauce – 1/2 Chopped Onion – 1 14.5 Ounce Can Diced Tomatoes – 1 Cup Cheese (any kind) – 1 Tablespoon Taco Seasoning (you can add more if you like) – Black Beans, optional

Combine all ingredients in a large mixing bowl, reserving 1/2 cup of the shredded cheese.

Put into a 2 quart pan and top with remaining cheese.

Bake in a 350 degree oven for 20 – 25 min.
