Salami and Basil Ciabatta

This is such an easy peasy sandwich to make and it is packed with layers and layers of flavors.

This is perfect for any afternoon lunch or even dinner.

It comes together quickly and it’s inspired by Pizza Hut’s new Flavor of Now menu. They need to add this super easy ciabatta to their collection. Sometimes when everyone else wants a pizza, I want a hearty Italian sandwich.

Let me show you how easy this is to make.

Ingredients:

 

 

    • large ciabatta loaf (cut into four sandwich size portions)

 

    • 1 clove of garlic, minced for each sandwich

 

    • 1 t olive oil for each sandwich section

 

    • balsamic vinegar (to drizzle over each sandwich)

 

    • mozzarella slices (we put two slices on each sandwich)

 

    • 1/2 c fresh spinach leaves

 

    • 1/4 c fresh basil leaves

 

    • 4-5 salami slices for each sandwich

 

    • 2 T sliced banana peppers for each sandwich

 

Slice open each ciabatta sandwich portion as you see in the images below. Place them on a cookie sheet. I like to cover my cookie sheet in parchment paper to make clean up easier.

Drizzle each one with 1 teaspoon of olive oil, spreading it over the bread slices. Use the back side of a spoon to gently smear it into the bread.

Drizzle balsamic vinegar over each slice.

Take one minced garlic clove and spread it over the two slices of ciabatta that makes up each sandwich.

Your bread will look like this:

Spread out about 2 tablespoons of banana peppers over each slice of ciabatta.

The flavors will soak into the bread.

Next, layer the sandwich slice that will be the bottom slice with all of the toppings.

First I did a layer of spinach leaves and fresh bail. I alternated- one basil leaf, one spinach, one basil leaf, one spinach, etc.

Then, I did 2-3 slices of fresh mozzarella slices on top of that.

Then 4-5 salami slices.

Then top that with 2 slices of fresh tomatoes.

Then garnish with a few more basil leaves.

To recap, what will be the top slice of the sandwich only has the olive oil, balsamic, garlic and peppers on it. The slice that will be the bottom of the sandwich has the olive oil,balsamic, garlic, peppers and everything else on it as well.

Pop it in the oven at 350° for 10-12 minutes, or until the cheese is melting.

Once the sandwich is done in the oven, take it out and let it cool for 2-3 minutes.

Once it has cooled down enough, pop the top ciabatta bun on the sandwich and you are good to go!

Serve with with a tall glass of water with a slice of lemon.
