Life has been crazy at the Lopez house this month. We’ve been meal planning and doing a little unexpected traveling, so I have had limited time to publish them.
Are you ready for another week of large family meal planning ideas? Here is what I am feeding my family of eight this week.
Large Family Meal Planning
White Chicken Spaghetti– this is such an awesome spin on spaghetti. You make it with precooked chicken so it comes together fast. I grab a rotisserie chicken. You can make your own in the slow cooker here days in advance. We will serve this with salad and maybe garlic bread.
Mexican Taco Casserole– this is super delicious and stands alone. No need for sides- you could serve some fruit if you want to.
Chorizo and Eggs– we love breakfast for dinner. So and and super filling.
Leftovers– use them up!
Freezer Meal Planning
We reserve one day a week to eat out. This is going to be a crazy and fast paced week. We need to stick to our meal plan or bust! One way this is helping me is by utilizing freezer cooking. Freezer cooking will change your life. Such a helpful way to get dinner done fast.
I like to determine what I am having for dinner the night before and set it in the fridge to start defrosting. By morning, if it is not defrosted I will use my thaw board to let it completely thaw.
