Homemade Peach Lemonade Recipe You Will Love

One thing I love to make from scratch in the summertime is lemonade. I have a ton of lemonade recipes up my sleeve.

It is a drink that is super easy to make, very inexpensive and always quenches our thirst.

It screams summer.

Have you ever tried adding fresh fruit to your lemonade? It is a simple way to make this delicious drink a little fancy.

Here is how we make homemade peach lemonade.

Let me show you just how easy this is to make.

It’s perfect for family and neighborhood gatherings, birthday parties, summer baby showers or any day just because.

Ingredients:

4-5 large fresh and ripe peaches, chopped, seed removed, skin on.
4 cups water
3/4 cups sugar
1 cup freshly squeezed lemon juice (roughly 6 lemons)
4 cups of ice
Optional: fresh mint

Directions:

Grab your peaches and clean them well. Remove the pits from inside by cutting them into slices, but keep the skin on.
In a medium sized pot, add in the 2 cups chopped peaches, water, and your sugar over a medium heat.
Bring it to boil.

Once it’s boiling, reduce the heat to simmer and cook uncovered for five minutes.
After five minutes, remove the pan from the burner and set it to the side letting it cool for at least ten minutes.

Grab your blender. Pour the peach mixture into it and blend until smooth.

Pour into a ziploack bag and refrigerate until chilled.

Once the peach mixture is chilled, at least 2 hours, press it through a fine mesh sieve into a large pitcher. This will give you just the juice from the peach puree. That is what you want.

Wash your lemons and cut them in half to squeeze the juice from each lemon into the large pitcher. Ensure that you do not drop in any seeds. You should have about one cup of juice from all of the lemons combined.

Stir to mix well.

Add the ice to the pitcher.

Fill each glass and enjoy.
Garnish the glass with fresh mint, and peach slices.

I totally recommend the mint leaves. They are awesome!

The Easiest Ever Homemade Blueberry Salsa

I love this time of year when fresh fruits and vegetables are abound. Literally, some of the best recipes come from fresh ingredients.

I want you to think outside the box for a minute. I am a Texas girl and chips and salsa is something I love!

Have you ever tried homemade salsa recipes that are outside of the traditional tomato-based ideas?

Homemade Blueberry Salsa is the place to start!! Blueberry recipes are some of my favorites!

The fresh blueberries, red bell pepper and cilantro, combine with the jalapeños and purple onion for the most amazing combination.

Tell me, where do you stand on cilantro? I would love to know. They say people love it or hate it. I am a HUGE fan!

There are two simple secret ingredients that brings it all together.

Let’s start by gathering up all of our ingredients. If you’re a frequent produce shopper, you likely have everything on hand already to make this delicious salsa.

Ingredients

This is so simple to make, you’re going to want to make it as long as this beautiful fruit is in season.

It is an excellent go-to for your get togethers and parties or even potlucks.

Directions:

Wash and gently pat dry the blueberries. Then cut them in half and set them aside.

Grab a bowl. Toss the blueberries in there.

Dice your onion. Toss them in the bowl.

Chop the cilantro. Toss it in the bowl.

Dice up the red onion. Yep, toss them in the bowl.

Dice the red bell peppers. The smaller the better. Throw those in as well.

Dice the jalapeños.

Want it spicy? Keep the seeds.

Want it not so spicy? Remove the seeds.

Toss them in.

Grab a smaller bowl and add the salt and lemon juice. Whisk it a bit.

Pour the lemon mixture over the fruits and such.

Stir well to combine everything. Serve this homemade blueberry salsa with cinnamon sugar chips.

It’s amazing!

Large Family Meal Planning Week 244

If you are a larger family and looking for meal plan ideas, you have come to the right place.

We have six children at home, plus myself and my husband. We are a big family and dinnertime is expensive if we eat out.

For years I have meal planned.

There have been seasons where I have done an amazing job at it.

There have been seasons where I have not given it my all.

I can tell you, when I am not on track with meal planning, we waste so much money and my household feels like it is in constant chaos.

When I am on point with meal planning, everything runs like a well oiled machine.

Here is what large family meal planning looks like for us.

Large Family Meal Plan

Spaghetti– it’s such an easy go to. Every single child in my house loves it. I will make these rolls and a side salad or fresh fruit. I stocked up on fresh peaches and strawberries at the store this week.

Sheet Pan Salmon with Peppers and Asparagus– this is from our May freezer meal plan. I am so excited to try this. I will serve it with pearled cous cous (have you ever tried this? so good!) and broccoli.

Pulled Pork Nachos– using up the leftover blackberry pork tenderloin from last week, we are using that with drained, canned black beans and shredded cheese to make nachos. My kids love this stuff and it is such an easy dinner option!

Pesto Chicken– super delicious. This is from our March freezer meal plan but I make a new one all the time a freeze it. It is so easy to assemble. The directions are to bake it, but I am going to toss it in the slow cooker. Served with steamed broccoli and brown rice made in the pressure cooker.

We are traveling later this week, so our menu is short this week. We are visiting family in San Antonio and attending an event.

The Three Things That Make Meal Planning Easy

I will tell you, creating a meal planning system is what has been most helpful for me

Back when my twins were infants were infants and I created a five step meal planning system. You can learn all about it here.

The system is what I still use and implement and it has never failed me.

Aside from that, I use online grocery shopping which allows to me ensure I am on budget before ever checking out. It also eliminate impulse shopping at the store.

I do as many make ahead meals as I possibly can by doing freezer meal assemblies. We create a new menu each month.

Following these things make meal planning a breeze.

Meal Planning for Breakfast and Lunch

Here is our breakfast menu for the week.

Breakfasts:

hard boiled eggs and biscuits x2
breakfast sandwiches
Cold Cereal x2 and fruit
oatmeal

Lunches:

Sandwiches (pbj/grilled cheese/turkey) x2
Hummus and Pretzels
Mac and Cheese x 2
Crackers, cheese, lunchmeat and fruit
Chicken tenders and baked fries

Easy Ways to Jazz Up Boxed Cake Mix

Using a boxed cake mix, it’s simple to whip up a tasty treat in almost no time at all. It only takes a few extra minutes to jazz up the flavor, by implementing one or more of the following tips.

Substitute Milk

One of the easiest ways to get a richer, denser cake from a mix is to use whole milk instead of water. If you don’t have enough milk to replace all of the water, add the milk you do have and fill the rest of the required measuring cup with water.

Increase the Egg Count

Most cake mixes call for two eggs as part of the basic recipe. However, to produce a cake with closer to bakery-like texture, use three or four eggs instead. Another option is to use the original number of required eggs plus two large egg yolks.

Incorporate Instant Pudding Mix

Instant pudding may very well become your secret weapon, when it comes to making a boxed cake better. Not only does it add moisture to the finished product, it also adds a second flavor.

For example, try chocolate cake mix with butterscotch pudding or vanilla cake mix with lemon pudding. The possibilities are almost endless!

Use Real Butter

If you don’t use real butter on an everyday basis, at least consider it for baking purposes. Honestly, it probably goes on sale more often than you think and it improves the cake's flavor and texture tremendously. Simply replace the typically required cooking oil with an equal amount of melted butter. Easy-peasy!

Mix in Fruit and/or Nuts

Probably the most noticeable method used to jazz up a boxed cake mix is to add special toppings or mix-ins as ingredients. Chopped nuts or fruit pieces represent two healthy ways to take your cake mix to the next level, without much effort at all. Ingredients including chocolate chips and sprinkles serve the same purpose.
