Quick dinner and full bellies…

I get a lot of questions from friends who are seeking quick dinner ideas.

I am a Crockpot Goddess- especially during the busy school year when I have no time to think and my life is determined according to the schedule of activity’s we are bound to. I quickly found, after going from a family of just Garrett and me, to a family of many mouths to feed, I need guidance with meal planning. I see no problem eating out every night of the week!

A few years back I became hooked to a cooking remedy called Homemade Gourmet. Where are the advertising sponsors when I need them? Anyway, the consultant I order from also offers meals you can purchase each month very much like Super Suppers and Dream Dinners. What we had last night was yummy-o. Not only filling up all the hungry tummies, but required very little energy from me. The meal was made using Homemade Gourmet’s BBQ sauce, but you can improvise. All of this to say and here is the gist of it.

Crockpot BBQ
1) Take one beefy roast and slather it with your favorite BBQ sauce in the crockpot.

2) Add a little water and cook it at the lowest temp for the longest period of time that your schedule will allow. (Cooking it too quickly will make the meat tuff.)

3) The last hour or so of cooking, throw in some hotdogs to extend the meal a little, and to meet the request of 3 year olds.

4) When done cooking, set the hotdogs aside.

5) Pull the roast apart (shredding it with a fork) and mix it up with the sauce left in the crockpot. Put ample amounts of the BBQ meat surprise on hamburger buns. If you want, add sliced pickles.

Baked tater tots and a delicious can of home style baked beans and and wha la… dinner is served my friend.

I even had time to stir up some scrumptious brownies… served warm with super cold vanilla ice cream. A delightful summery warm and cold surprise.
