Ready for Back to School?

So, school starts this coming Monday…. what is that, 4 days away at this point?

Am I ready?

No.

Have we shopped for school supplies?

No.

If it were not for Grandma Lopez in San Antonio and the lovely invention of internet shopping, the clothes shopping and backpack shopping would still be on my to-do-list. We thank her and love her for the recent deliveries at our front door.

I promise to get the supply shopping done this weekend!

With all of that to say, I defiantly have back to school on my mind. For dinner I have decided to cook breakfast…. in the crockpot. The crockpot blog I told you about has a seemingly delicious breakfast recipe and I have got it cooking now. We are going to have breakfast for dinner and if it is good, then it will make my list of easy breakfast ideas for back to school- cook it overnight and have it ready when we get up for our morning routine. My kids are awful about eating breakfast- we get tired of boring cereal (which is pure carbs and they are hungry again within an hour). I try to cook breakfast some school mornings like eggs and bacon or biscuits and gravy, but the last two years our schedules were just too busy in the mornings…. hard pressed to get to school early enough to help with PTA stuff or just cramming in too many to-do-list items before heading to school. I am excited and hope this breakfast turns out as good as it smells and as good as all the reviews. Here is the link if you want to try it yourself- Hashbrown Crockpot Casserole. In a very roundabout way, this is me preparing for back to school. Oh, and even better, I only spent $10.66 to buy everything for this meal. I will report back on how it turns out- by the looks of my full crockpot, I think it will feed an army!

And, what was for dinner last night? Lynn, this is another simple dinner solution that you just can not mess up. I am determined to help you find a way to make cooking easy for your family (and my poor staving brother j/k).

I grilled four chioptle seasoned (Homemade Gourmet) chicken breasts on the George Foreman Grill.

Then, I took baby romaine and lightly coated it with EVOO and red wine vinegar.

Then, I added some crumbled feta and a can of drained whole black olives.

I topped the salad with sliced grilled chicken breasts.

Super simple, super yummy and rather healthy! Clean up was easy too! My grill comes apart and I just plop the grill plates in the dishwaher. So easy! You could totally use an outdoor grill was well.

Alright, I am off to conquer the rest of my day. Today, if I get nothing else done, I MUST get most of the laundry done and mop my kitchen floor. It is sticky and gross and who knows what is growing on it.

Dinner (breakfast) smells good and will be ready at 5:00!
