Ready for a new week?

I am!

Below is my meal plan.

Just doing five this week…

Sunday night we had mac and cheese from a box. The kids grazed all day… and I wanted something easy. So that takes a meall off my list.

(Great way to start off the week, hua? Told you I bought 12 boxes at Sams….)

Saturday night we will eat out.

So, here are the meals for Monday-Friday this week.

November 16-20

Dinners:

Baked Penne Pasta with Garlic Bread. Remember we purchased almost 20 pounds of penne pasta at Sam’s last weekend? Well, I have lots to use, so what better than just baking it with spaghetti sauce, cooked crumbled Italian Sausage and mozzarella cheese? That is the plan. Garlic bread on the side.

Fried Egg Sandwiches. My big boys love and beg for fried egg sandwiches. Yuck! I think they are gross. But they are easy and from time to time I like to give them what they ask for…. even if it means I eat something else. Lenny will eat them too. I will make bacon on the side and probably a batch of pancakes for those of us not so keen on egg sandwiches. Then, I will schedule cholesterol testing for us all.

Zesty Crockpot Chicken with Couscous- I can not wait to try this! The title pretty much says it all. I will probably go light on the hot spices so everyone can eat it. I will also serve mixed veggies as a side with the couscous. Hoping for leftover chicken to use later in the week for a casserole.

Cream Corn and Spinach Enchilada Crockpot Casserole– I will use any leftover chicken from the zesty crockpot chicken in this casserole. We made this the first week I started blogging about my weekly meal plans back in September. And, we are long over due for a repeat. Man, it was GOOD! Great way to hide, I mean work in, some veggies for your kids. I will serve Puerto Rican rice with it. Oh, my tummy is growling.

Leftover Buffet…. hope we have some leftovers. 🙂 If not, I am sure I’ve got some more penne pasta somewhere that I can make. ha!

Lunches:

Garrett and Anthony will pack a sandwich. Either turkey, ham, pb&j, PB& Nutella, hot dog and bread, or summer sausage with crackers and cheese.

BBQ chips… they are so adventurous.

Fruit choices are apples, bananas, or grapes.

They can also have a granola bar or yogurt.

Choices for the twins are the same, but since they are home we me, I can also add mac and cheese to their list. Easy to whip up at lunch time.

Breakfast Choices for All:

Pillsbury Cream Cheese Cinnamon Rolls (you can get them now with cream cheese topping instead of icing…. gives a little healthier approach. Am I convincing?)

Honey Bunches of Oats

Nutella on Toast

Eggs and Toast

Maple Brown Sugar Oatmeal

That wraps up our meal plan for the week.

Here are a few pictures of the little ones and me as we walked the trails at a park by our house this last week. I needed time out of the house! So did they.

The sun was starting to set… so some of the pictures may look less ‘flashy’. Bare with me.

This park is so awesome. They have these amazing trails that go around a creek and awesome places to climb and safely view the water. All of the children love it.

Climbing so high! Hey, they are boys. I can not keep them on the ground forever. (And they really were only about 2-3 feet up…. no worries!)

Look Mom! For those who are worried, to give you an idea how high Nick is climbing, take a look at Luke. Luke is standing on the ground. So, Nick is literally only 2-3 feet off the ground. Don’t freak out.

The things they talk about when they are walking with each other. And, they like to make funny gestures, like Nicholas is, and then say ‘Mom, take a picture of me doing this…’ Silly!

Still talking…..

We are learning how much Matthew absolutely LOVES being outside. As many of you know, we had to spend our summer indoors as the heat affect Matthew’s eczema horribly. Now that it is cooler out, we have the opportunity to be outside more. He has so much fun and is all smiles. He bounces up and down in my arms. He generally cries when we have to come inside. This is him so excited in his stroller as we walk the trails.
