Crockpot Italian Chicken– take 4-6 chicken breasts and toss them in the crockpot. Cover in a jar of your favorite spaghetti sauce and cook in the crock for 4-6 hours. Serve over your favorite noddles, topped with mozzarella and/or parmesan cheese. Yum!

Loaded Baked Potatoes and Grilled Cheese Sandwiches– what do you like on your potatoes? Bacon, olives, cheese or just plain ol’ butter?

Grilled Chicken Salad– grill up chicken breasts. I like to sprinkle them them Mrs. Dash, which is salt free. Once done, slice up your chicken and serve over a bed of salad. Even my kids love this. What do you like in your salad?  Served with fruit.

Chicken Pasta Salad– this is amazing! Great recipe for taking to the park as well. If you have multiple recipes each week that involve grilled chicken, grill them all up at one time and refrigerate the remaining chicken to use later in the week. That is what I will be doing. In other words, cook once, serve twice. You’re just mixing things up a bit.

Grilled Hot Dogs and Baked Tator Tots– it is already hot here in Texas. Crockpot cooking and grilling are perfect!

Leftover Buffet– use ’em up!

  1. Thanks for sharing Crystal! I am going to borrow your crock-pot chicken for my menu this week. LOVE a quick and easy crock pot recipe. I think I’ll do the loaded potatoes as well, and I’ll add some veggie shreds to them. Yeah, I am actually looking forward to the menu this week.

  3. You slow cooker chicken may be my dinner tomorrow night. Looks good. Maybe I should post a weekly menu. I have recipes I post from time to time. Any how that’s for some inspiration.

  4. Your menu looks good. I make an Italian Sloppy Joe, the same way you make your chicken. I throw ground meat (I use turkey, frozen works) into the crock pot and let it cook with a jar of tomato sauce. I serve it on buns with mozzarella. So easy and good.
