I posted on Facebook the other day that it is 7,000 degrees here in Texas. I might be off a little. It could be closer to 7,001. (And we are not even in June yet.)

I am crockpot cooking and grilling this week as much as possible. (We are currently on a spontaneous road trip to see Grandma and Grandpa about 300 miles away. But when we get home, we’ll need to eat.)

Crockpot Taco Soup– might have to cheat on my Nutrisystem diet  this day! Maybe. I love me some Taco Soup.

Crockpot BBQ Chicken– so easy. Toss your chicken pieces in the crock and cover in your favorite BBQ sauce. Cook for 6-8 hours, until done.   Served with steamed veggies and dinner rolls.

Salmon with Hoisin Sauce– this is really really  yummy and has a short ingredient list. The directions instruct to broil this in the oven, which is what I did last time I prepared it. However, I am not heating up my kitchen. I am going to place the fish in foil packets and grill them. Served with steamed rice, dinner salad and rolls.

Salad topped with Grilled Chicken– super easy and my kids love it. When I cook the grilled chicken for this dinner, I will go ahead and grill enough chicken for the pasta dish below. Served with fresh fruit.

Grilled Pasta Salad with Chicken– one dish meal using the pre-cooked grilled chicken from the night before. This is an incredible dish and very easy to make. Served with cresent rolls.
