On to the meal plan…

Lasagna Rolls– excited to make these. Last week I had the pleasure of chatting with Jennifer Matison in Consumer Marketing with theĀ  Beef Council here in Texas. We talked about kids and food and the role of mommy, amongst other topics. She shared with me a fun food idea that she uses for her kids- taking lasagna strips and ground beef and turning it into a rolled version of the much loved Italian dish. I am going to try it and share the recipe with you guys soon. I think my boys are really going to like it.

Easy Chicken Cacciatore– made in the crockpot, this is a recipe I am super excited to try from a cookbook by an author here in Dallas. Check out Simply Sugar and Gluten Free by Amy Green. She has a food blog as well as the cookbook. I will share the recipe on my site in the coming week.

Grilled Chicken Salad– grill chicken breasts and serve over a salad. So easy.

Crockpot Little Smokies– carry over from last week. Served with fresh fruit and mashed potatoes.

Crockpot Lemon Chicken– carry over from last week. Served with fettuccine noodles, french bread and fruit.

Leftover Buffet– use ’em up!

    i will be checking out your recipes and possibly adidng them to a future menu!
