What’s For Dinner Tonight?

I knew you would ask.

Let me start off by telling you how last nights dinner turned out- the Hashbrown Crockpot Casserole.

Can you say YUM-O?

It was really good. We had leftovers for breakfast- reheated very well. Garrett and Anthony will be back today from their final summer endeavours and they can try the leftovers and see if they like it. I think they will. If so, it is a go for our school breakfast menu!

So, for dinner tonight I am making another crockpot dinner. Friday is usually an eat out night here, but I am on a roll with this crockpot cooking. As I type, Crockpot Fried Rice is a cookin’.

I spent $14.37 to make this. Keep in mind, most of the ingredients are very common (butter, leftover rice, frozen veggies, eggs, soy sauce, etc). I was out of everything. I did not have any leftover rice (do not use minute rice), so I had to make some. Rice is a staple at our house so that is a rare case. I even tripled this recipe. So what I spent literally filled the crock pot up with just enough room to stir. I used leftover chicken from Wednesday nights dinner… so I recycled a little. You can use any meat. The idea is to use whatever is already cooked and left over in your fridge, or I imagine to stir in some frozen shrimp would be good too. Throw in a little bit of this meat or a little bit of that. Whatever works for you.

About the rice.

I make my rice in a rice cooker. It is totally effortless. In this case, the recipe calls for leftover rice, but since I had none in the fridge I made 6 cups worth in the rice cooker. If you do not have a rice cooker, I highly recommend you get one! They are so easy to use it is almost scary. They are pretty inexpensive too. We have rice as a side dish almost every week. If you do not have leftover rice and just want to throw in uncooked rice, you can do that, but check the comments of the recipe for specifics. I think you have to omit the raw egg if you are going to do that.

Smells really good. My inlaws are driving in and it should be ready when they get here. Totally enough to feed everyone. And for $14.00… you can’t beat that.
