Crockpot Chicken and Stuffing
Tired of meal prepping? Make this Crockpot Chicken and Stuffing meal ahead of time for an easy dinner option! Simply prepare the meal in two separate freezer bags so it's ready to throw in the slow cooker whenever you need it!
Ingredients
- 3-4 Large Boneless Skinless Chicken Breasts, salted and peppered
- 1 Teaspoon Parsley
- 1 Can of Cream of Chicken Soup
- 8 Ounces Sour Cream
- 1 (6 Ounce) Box Stuffing Mix
- ¾ Cup Low-Sodium Chicken Broth (you can also use water)
- 2 Cups Fresh or Frozen Green Beans
- 1 Cup Baby Carrots
- 2 Gallon Freezer Bags
- Optional Stuffing Additions: Diced Onions & Celery, Ground Sausage, Cranberries
Instructions
- Season the chicken breasts with salt and pepper. Combine the other ingredients for the stuffing (except for the broth) in a separate freezer bag. Freeze flat.
To cook:
- Layer in your crockpot as follows: chicken breasts, stuffing mixture on top, layer of foil, and veggies. This makes it easier to stir the veggies. This is completely optional as you could just mix it all together in your crockpot. Cook on high for 4-6 hours or low for 6-8.
