Easy Recipes: Baked Pomegranate Salmon
I have told you many times we are huge fans of salmon. I can even get the four year old to eat it without any complaints.
It doesn’t hurt that it’s healthy and high in protein.
This time of year I do not do a lot of outdoor grilling, instead I bake my salmon. It cooks super fast and goes well with so many different dishes.
A few weeks back we were at Trader Joe’s and I noticed they had pomegranate seeds. I grabbed a container and knew I could make something with them.
I used them many times as an addition to our salad, my husband added them to ice cream (and said they were awesome) and I made a baking sauce with them for our salmon. I love easy recipes like this!
Here is how you make it.
Ingredients:
- 6-8 salmon fillets
- 1/4 c hoisin sauce
- 1 clove garlic, minced (or a spoonful of the jarred stuff)
- 1/4 c pomegranate juice
- 2 T pomegranate seeds
- a few pinches of kosher salt
- a few cracks of fresh pepper
Mix the fist four ingredients together. Whisk them if you need to.
Add in the pomegranate seeds. Stir well to combine.
Place the salmon in a cookie sheet. I cover the cookie sheet in parchment paper to make clean up easier.
Sprinkle the tops of the salmon fillets with kosher salt and a few cracks of pepper.
Evenly spread the marinate over the tops of the salmon.
Pop them in a 350 degree oven and bake for 15-20 minutes depending on how well you like your salmon.
Serve it over a bed of rice. Here is my easy recipe for making rice. You’ll love what I add to spruce up the flavor.
I also served this with a aide salad topped with more pomegranate seeds as well as dinner rolls.
And that is it, dinner is done! Perfect for a busy weeknight!
