A quick tip I wanted to share with you today is something I’ve been doing for years. We eat rice at lease once a week at our house as a side. It goes perfectly with salmon and chicken meals.

One thing I keep on hand at all times is chicken broth. I love to cook my rice in it to give it added flavor. This works perfectly for white rice, brown rice, minute rice, wild rice and even things like couscous and quinoa. Give it a try sometime!

Here is what we are eating this week . We have a super cold week ahead of us here in North Texas.

Weekly Meal Plan Ideas

Taco Soup– made on the stove. Served with cheese, sour cream and cornbread.

Cheesy Chicken and Salsa Skillet– one dish meal.

Black Bean Chicken Tacos– these are so yummy!

Tex Mex Roast – I will cook the roast in the slow cooker  like I did in this recipe, we just won’t eat it shredded in wraps, although that is yummy! Served with a veggie and mashed potatoes.

Baked Garlic Butter Salmon– delish and so easy. Served with a veggie and couscous.

Leftover Buffet– use ‘em up!
