Weekly Meal Plan 42

Another school year begins and I am pretty torn. We spent most of our summer sitting on the homeschool fence. There were days I was convinced customizing our children’s education is exactly what we were going to do. By the next day I would convince myself of all the reasons why it would not work.

This morning, Garrett started middle school and Anthony started 3rd grade. They could not sleep last night. They woke up early to bacon and eggs. School supplies are delivered and a new year begins and I enjoy a hot cup of coffee.

Peanut Butter Chicken Skewers– this is a recipe a Facebook reader shared recently. We’ve made it once and LOVE it! Served with steamed coconut rice. (carry over from last week- we did not get to make it)

Hawaiian Chicken– cooked in the crockpot and served with mixed frozen veggies and steamed rice.

Crockpot Beef Stroganoff served with buttered egg noddles and steamed garlicy green beans.

Southwest Chicken Enchilada Breasts– cooked in the crockpot and served with Puerto Rican rice. I will save any leftover chicken and freeze it to use in quesadillas for a future menu.

Leftover Buffet– use ’em up!


Big Boys Lunch:

Ham and turkey sub
chips
carrots and ranch or watermelon cubes
apple
bottle of water

Littles at home:

corny dog
mac and cheese
ham or turkey sandwiches (two days)
hard boiled eggs and cheese cubes

For sides we have baked tator tots, grapes, watermelon, bananas, apples, carrots, fruit cups, frozen yogurt tubes or apple sauce

Oatmeal

Cold cereal- 2 mornings

Fruit smoothies (new to our menu!)

Bagels and cream cheese

Popcorn on the stove

Wheat Thins and cream cheese

cereal bars or granola bars with yogurt

baked pizza rolls

any fruit or veggies in the fridge
