Zuppa Toscana Soup Recipe

Whip up a delicious pot of Zuppa Toscana Soup in no time with this easy recipe!

Ingredients

  • 1 1/2 Pounds Ground Italian Sausage (Whole30 compliant)
  • 1 (1 1/2) Pound Bag of Baby Red Potatoes
  • 1 Onion, diced
  • 6 Ounces Kale, chopped
  • 2 Tablespoon Minced Garlic
  • 6 Cups of Chicken Broth
  • 1 13.5 Ounce Can of Full Fat Coconut Milk
  • 2 Teaspoon Ghee
  • Salt & Pepper
  • Crushed Red Pepper (optional)

Instructions

    1. Melt the ghee in a large stock pot and add the minced garlic and chopped onion. Cook over medium heat for 3-4 minutes. 
    2. Add in the ground Italian sausage and cook until browned. 
    3. Toss in the baby red potatoes and kale. Season with salt and pepper. Cover completely with chicken broth. 
    4. Set the instant pot to soup and allow to cook for 30 minutes, or until potatoes are fork tender. 
    5. Release the pressure and pour in the can of full fat coconut milk. Allow to sit covered for 5 minutes. Then stir. You made add crushed red pepper to amplify the spice or leave it out.
