Easy Recipes: Yogurt Dill Salmon

We love salmon at our house. We eat it generally once a week. I love how versatile it is and the fact that it thaws super fast if I’ve forgotten to lay something out for dinner.

I’ve also shared with you that I am trying really hard to watch my calorie intake right now. That said, I also don’t want to starve myself or eat cardboard for dinner.

After searching for some ideas using yogurt as a marinade, I came up with this and it was so scrumptious! (Make sure you check out all of my easy recipes that are perfect for the school year while you’re here.)

Easy Recipes: Yogurt Dill SalmonIngredients:

  • 6-8 salmon fillets
  • 1/2 c plain yogurt
  • 2 T dijon mustard
  • 2 T fresh dill, chopped
  • salt and pepper

In a bowl combine the yogurt, dijon mustard and dill.

Stir until well combine.

Line a cookie sheet with parchment paper to make for easy clean up.

Place your salmon fillets on the pan an inch or so apart.

Sprinkle with Kosher salt and fresh cracked pepper.

Generously coat each fillet with the yogurt and dill mixture.

Pop them in a 350 degree oven for 20 minutes or until cooked to desired liking.

I served this with sauteed garlic squash and zucchini with a strawberry spinach salad.

Such an amazing dinner that was super easy. By the time the salmon was done in the oven, the squash ans zucchini were done too.

The salad comes together super easy. I will have to share that very easy recipe with you soon.

This is perfect for a busy week night.
