Do you have your Christmas menu planned? My sister-in-law and youngest brother are hosting the Christmas festivities, including dinner, at their home on Christmas Eve. They are serving Mexican food which hands down is a family favorite and has been a tradition for years. We do a gift exchange, eat, make some cookies and memories with our children, etc. This year we have a visit from Santa planned.{{eek!}}

Here is what I am feeding my family this week as we gear up for the celebration of the birth of Jesus.

Cowboy Beef and Black Bean Chili– this is a recipe from the Texas Beef Council and is perfect for large crowds as your guests come in for the holidays. Sweet cornbread would go well with this. Yum!

Simple Shredded Beef Roast in the Crockpot– this recipe is very easy and I will use the shredded roast to make Tex Mex Beef Wraps. Served with rice as a side.

Beef and Black Bean Nachos– using the chili leftovers we will make nachos and add toppings like lettuce, tomatoes and cheese.

English Muffin Pizzas– so easy!

Leftover Buffet– use ’em up!
