Skillet Lasagna– I am going to use this recipe as my template but I will improvise. Yum! Served with salad and garlic bread.

Rice and Bean Bowls- I’ll make a pot of pinto beans in the crockpot. Steam some white rice in the rice cooker. Use leftover chicken in the freezer (or you could totally use a diced rotisserie chicken!). Pile all of this in a bowl and garnish with cheese, salsa, sour cream, etc.

Pesto Chicken and Pasta– This is a carry over from last week…. Cook 4 chicken breasts in the crockpot smothered in your favorite pesto sauce. Once done, chop the chicken up. In a bowl mix the chicken and leftover sauce from the crockpot with a cooked bow-tie pasta. Add some mozzarella cheese and pine nuts. Yum!

Homemade Pizza– using PW pizza dough recipe. Kids can help assemble… they love this!

Leftover Buffet– use ’em up!


Big Boys Lunch:
PBJ or PB and Nutella
chips
carrots and ranch
watermelon cubes or apple
Wheat Thins and cream cheese
bottle of water and flavor packet
(they are starving growing boys… can you tell?)

The twins start Mothers Day Out this week (3 days a week). So for their lunches I will pack:
PBJ sandwich or hard boiled eggs

string cheese
chips
cup of yogurt, fresh fruit or apple sauce
apple juice box

Matthew and I will eat whatever we can find. 🙂

Apple Brown Betty Muffins these look awesome and we all know there are apples galore this time of year at the grocers. I am going to double the batch and make 2 dozen so we will have enough for 2 school mornings. 
Egg Sandwiches
Cereal- 2 mornings

Fruits or veggies in the fridge
Popcorn on the stove
cereal bars or granola bars with yogurt
baked pizza rolls
baked cheesy potato wedges dipped in sour cream

  3. I checked out your link to the Pioneer Woman layered salad. That looks awesome. While I was there I found a recipe for meatball sandwiches. Trying those out this week. Have you tried them?

    We also making your famous chicken nachos, but with beef. So, I guess we are making your famous beef nachos! Lol.

  4. Jamie- if I do not plan our meals out for the week, dinner never happens at my house. Give it a try. I just plan out 4-5 meals and decide which night to make them as we go.

    Kim- u crazy woman! I have not tried the meatball sandwhich. I am not a meatball sandwhich kinda gal… but I like meatballs in my spaghetti. Go figure. Sounds like something my kids would love. Let me know how it turns out.

    I want to make the pesto chicken & pasta you posted. How long and on low or high in the crock pot? Do you do frozen or thawed?

  6. The meatball sandwiches were a hit! Mike always orders them at Subway so I figured he would like them. Everyone liked them, but me. 🙂 I guess I am like you. Meatballs in spagetti….great, but not so great on a snadwich.

    We had them with corn, ranch style beans and to make it really healthy onion rings.

  7. Erin- cook the chicken smothered in your favorite pesto sauce in the crockpot on low for 7-8 hrs or on high for 4-6 hrs. You can throw them in frozen if you want. If you do that I would cook them for 6 hrs on high.

    Then, once the chicken is done, boil your pasta on the stove.

    Drain.

    Chop up your chicken and add to the pasta. Coat the pasta and chicken with the leftover pesto sauce in the is in the crockpot.

    Stir.

    Add mozz cheese and pine nuts and you've gotta meal.
