Weekly Meal Plan 62
It is cold here in Texas! We got down in the 20’s last night and the high for today is not much out of the 30’s. We even had some snow over the weekend, but it did not stick in our neck of the woods.
Cold weather calls for…. comfort food!
By the way, how is meal planning going? Take it slow. One meal planning step at a time– at your own pace. Let me know if you have any questions as you go along.
Puerto Rican Stew– this is so wonderful (and simple)! Served with steamed white rice and a side of red beans.
Bean and Bacon Soup– excited to make this super simple super! I will make a pan of sweet cornbread as well. My family will totally love me. 🙂
Creamy Chicken and Pasta– inspired by a recipe I found on the back of a soup can that I will be tweaking and using the leftover chicken from last weeks Rosemary Chicken and Potatoes that I chopped up and put in the freezer. Served with french bread. (really excited)
Tator Tot Casserole– totally a comfort food at our house. This is a casserole that includes meat, potatoes and veggies. I will serve it with some bread and a salad.
Crockpot Candy Chicken– served with steamed rice, mixed veggies and a salad.
Leftover Buffet– use ’em up!

I love your blog. With two of my four children being boys and then two grandsons, and my hubby that is more boy than man and a son-in-law that is all boy as well, I feel your life. Where in TX are you, we used to live there, still have family there.

We lived in Odessa, family still there and near Lubbock. I have one daughter in Rockwall, family in Plano,Denton, Decatur, Mesquite as well.
