Weekly Meal Plan 141
We’ve had two good rains this last week which has made the temps surprisingly bearable. Sunday morning it was in the 60’s when we woke up, which is unheard of in North Texas mid-August!
Here is our menu for the week. Lots of crockpot meals and dinners using summer veggies.
What are you feeding your family?
Tex Mex Roast Wraps– the meat is made in the crockpot and makes for a super easy dinner. My kids really like these and so do the adults!
Basil Chicken and Feta in the Crockpot– served over quiona.
Grilled Salmon- served with this yummy zucchini squash gratin.
Mexican Stuffed Peppers with Black Beans and Quiona– this looks so easy and I have everything on hand except the bell peppers. Â I might try to cook these in my 6 qt crockpot. I also might add some diced, cooked, leftover chicken that I have in the freezer. Served with a salad.
Crockpot Chicken Divan– I have never made this in the crockpot before. Excited to give it a try. Served with fresh fruit and a dinner salad.
Leftover Buffet– use ’em up!

Got any tips for my sneaking some healthy fruits and veggies in on my carnivore family? :/
LuAnn- you could always add veggies to casseroles or layered dishes. I love to add a layer of fresh spinach to lasagna.
When I am pressed for time, or find them on sale, I like to get fruit trays or veggie trays and just put them out as a snack. Seal them back up and pop them in the fridge when you’re done and snack on them all week long.
Also, adding some broccoli or peas to a pasta dish is a great way to stretch a meal and sneak in some veggies.
I always try to have a steamed veggie, a salad or a fresh fruit as our side as well…. if they are hungry they will eat it. Maybe you make a rule that you cannot have seconds until your plate is clean- including veggies.
