Weekly Meal Plan 10
Last week was cold here in Texas. Still is, as a matter of fact. One night we had chicken noodle soup and grilled cheese sandwiches which is always a quick and easy meal plan solution when you are freezing cold and hoping they cancel school the next day as all the weather channels say you will have sleet and snow. Wishful thinking. I even had hot chocolate and Red Box movies on hand, because I listened to the news people. Darn it.
Here are my dinners for this week.
December 6-10
(Only cooking Sunday-Thursday. Friday night is our monthly Family Game Night where we will make something at my friend Kim’s house and then Saturday night is my youngest brother’s birthday dinner- Happy Birthday Josh. How is twenty six treating you? Could you get out of bed ok?)

Pinto Beans, Fried Eckridge Sausage and Mexican Cornbread– beans are made in the crock. So yummy on a cold day!
Chicken Pot Pie– I will share this recipe later in the week. So good and so very easy.
Beef Stroganoff– homemade gourmet meals pre-assembled and waiting for me in my freezer. I will just throw it in the crockpot. Served with wide egg noodles and steamed buttery mixed veggies.
Baked Corn Flake Chicken – can you say yum? Served with steamed buttery mixed veggies and mashed potatoes. Can’t wait!
Garrett and Anthony are like grumpy old men. Same ol’, same ol’. Soon they will request straight black coffee with their lunch.
Nutella and PB sandwich
Fruit- apple, grapes, strawberries (even carrots- veggie I know)
BBQ chips
The twins, who are home with me during the day, have a choice of:
Tortilla with PB and Bananas
Corny Dogs
Mac and Cheese
PB&J
Hot dogs
chips and fruit as sides
Eggs and toast
Nutella on toast (they have not let go of this Nutella kick!)
Cereal- Honey Nut Cheerios, Frosted Mini Wheats, Malto-Meal, Rice Krispy’s
Pioneer Woman’s Cinnamon Rolls (My plan is, if these turn out good, this is what I am making friends and family as Christmas gifts. It is featured on her website, but also in her cookbook that I got last week!) In her cookbook she offers a maple icing version and an orange icing version. This recipe makes 40-50 rolls, so I am going to do half and half.
This morning I made PW’s Migas for Lenny, me and the twins after big kids went to school. Garrett would never ever eat this- it has too many veggie things in it. It was FANTASTIC!!!! Make it! Serve it with soft corn tortillas to scoop the eggs into and some black beans! This too is in her cookbook. Buy it!
Have a great week and make sure you check back for the Chicken Pot Pie recipe! You’ll be glad you did.
