Weekly Meal Plan 74

I know I am very late sharing my menu this week, but I had a weekend of crazy computer issues and we finally went and purchased an external hard drive and my computer likes me again. 🙂 I feel very behind.

Bean and Cheese Burritos–  the initial plan was to use leftover pinto beans from one of last week’s meals, but I forgot to freeze them. So I called my mom to see if six days is  too old…. and the verdict …. they are a no-go.   So, I will use canned refried beans and shred some cheese inside as well. Then top with some green enchilada sauce and more shredded cheese and bake until bubbly. Served with rice as a side.

Breakfast for Dinner– this is always a fun option (and it’s easy!). Scrambled eggs, bacon and I am going to try this knock-off recipe for Cracker Barrels Hashbrown Casserole.  

Individual Pizzas– I am lovin’ Fleischmann’s Pizza Crust Yeast to make the dough quick and easy. Then everyone makes their own pizza. 🙂 Served with fruit and salad.

Baked Cheese Ravioli– so simple! Toss a bag of frozen cheese raviolis in a  9×13  pan, cover in your favorite canned spaghetti sauce, top with some shredded mozzarella cheese and cook until bubbly. Is that easy or what? Served with salad and dinner rolls. (You can also make them in the crockpot, too!)

Crockpot BBQ Chicken– carry over from last week. Still very excited to toss some chicken in the crockpot, cover in BBQ sauce and cook for 6-8 hours. Served with mashed potatoes and a steamed veggie.

The Johnny Carino’s knockoff that I made last week was awesome! Yes, I cheated on my diet to eat it. I was really proud of myself for being able to reinvent this meal.   I can not wait to share it with you guys. Delicious!
