Weekly Meal Plan 13

Remember that trip we made to Sam’s warehouse back in November? Lenny bought 20 lbs of penne pasta… well, I’ve just about used that up, but I still have a 48 ounce jug (yes, a JUG) of spaghetti sauce to use. (Correction, the jug of sauce is 8.5 cups…. not 48 ounces. It is huge! updated 7:28 pm)

Yes, I know I can just use what I need and freeze the rest, preventing my family from Italian food overload. But, that would be way too easy. Plus, we are excessive personalities ’round here.

So, here is to an Italian week!

Crockpot Pizza – awesome recipe, double click on the name to check it out!

Italian Crockpot Chicken– just take 3-5 chicken breasts (I put them in frozen) and cover in spaghetti sauce. Cook on high for 4-6 hrs or on low for 7-8 hrs. Yum! We will have steamed broccoli and buttered spaghetti noddles with it. The chicken comes out tender and perfect!

Crockpot Lasagna– ‘nough said. Don’t forget to add a layer of spinach to add some extra hidden vitamins and goodness! I will serve it with warm italian bread and EVOO with some Garlic Basil Homemade Gourmet Seasoning heated in the oil to use as a dipping sauce. The kids love it! They think it is fancy eatin‘.

Italian Soup and Grilled Cheese Sandwiches– mostly making the grilled cheese sandwiched for the kids, because I am not sure they are going to like the soup 100%. But it is an opportunity to use the leftover spinach from the lasagna and use up the italian sausage I have in my freezer.

Leftover Buffet– everyone needs one of these nights! Use up those leftovers!

Here is your solution. Stop by the store and get a rotisserie chicken, de-bone it, and there you go. Cooked chicken ready for your casserole in a pinch!
