Easy BBQ Chicken Pizza
Homemade pizza is a super fast dinner option for busy families. It is also a great time to make memories. For years when I was a kid, every other Thursday night (my mother’s payday) was homemade pizza night.
My kids typically just like cheese or pepperoni and cheese pizzas. I get really bored with that.
I decided to make BBQ Chicken Pizza. I wanted something really different that did not use traditional tomato-based pizza sauce. Why not use BBQ sauce.
If you’ve read my blog for long, you know I am very picky about BBQ sauce. Many of the commercial brands have high fructose corn syrup in them. KC Masterpeice has a new line that is made with only real sugar- so this is what we used.

Ingredients:

- 1/4 c of BBQ sauce (I used KC Masterpiece Kansas City Classic made with real sugar.)

- prepare pizza dough (I like to get mine at Trader Joe’s in the refrigerator section.)

- 1 c Mozzarella cheese

- 1/2 c pineapple chunks, drained

- 1 c shredded cooked chicken, I used canned (don’t fret, it was really good. I used Trader Joe’s brand.)

- 2-3 T chopped cilantro

You’ll be impressed with how amazing this is!
Spread out your dough. Typically I cover my baking pan in parchment paper, but I was out this time so I used foil.
Cover the dough with BBQ sauce the way you would with tomato sauce. I used 1/4 of a cup. Spread it out evenly.
Add to that the pineapple chunks, then the chicken, then the cheese and top with cilantro.
Everything is spread out evenly.
Look at how amazing this looks!
Wait until you taste it.
Pop it in the oven at 350 degrees for 12-15 minutes.
Slice it up and serve.
We really enjoyed this and it is perfect for any day of the week. It makes a great hot lunch too!
