Large Family Meal Plan Week 234

What is for dinner at your house this week? I have finished up our large family meal plan for the week. Such a relief!

I am so happy that my freezer is stockpiled with meals for this week. Honestly, I have made some extra meals over the last few weeks, so I have a nice collection of meals frozen at this moment. It really takes a lot of pressure off me.

We have six kids at home ranging in age from 17 years old to 20 months old. If I wait until the last minute to figure out what’s for dinner each night, guess what happens?

Yep, drive thru. And nothing gets old like drive thru food. Not to mention, we can’t go through a drive thru for under $50. Ever.

Here is what my meal plan looks like for this week.

 

Large Family Meal PlanĀ 

Indiana Chowder– we love this meal. We serve it by itself or add a side salad and rolls. This is a meal from our March freezer meal plan. It’s traditionally a stovetop meal, but we have converted to a baked meal for the purpose of making it freezer-friendly.

Slow Cooker Creamy Garlic Chicken– I am going to serve this over pasta. We will have salad on the side. This is from our February freezer meal plan.

Baked Chicken Enchiladas– my husband loves these because I use the green verde sauce instead of the red enchiladas sauce. Most red sauces give him heartburn. All that to say, these are his favorite! This is another meal I had in my freezer.

Ritz Cracker Casserole– serving this with steamed broccoli (I buy a large 5lb bag each week when I order my groceries online) and rolls. This is another meal from our March freezer plan. You can watch our assembly video here.

Buttermilk Pancakes– my kids love it when we have breakfast for dinner. This is a recipe from scratch, but you can also just used store bought. This is also a great recipe that allows the kids to help cook. One of my twelve year old twins LOVES to cook pancakes (and grilled cheese and eggs).

Leftover Buffet– this is the night we clean out the fridge and use whatever we have. OR, you can do what my friend Kelli does and make leftover soup with all of your leftovers.

 

Right now freezer meals and online grocery shopping are saving my sanity. They are a permanent fixture in my meal planning.
