Large Family Meal Planning

Chicken Broccoli Braid– remember when I ordered 40 pounds of chicken breasts from Zaycon  about 6 weeks ago? Some of the chicken breasts I diced up to use for casseroles and such. I am going to use one of the bags that is diced and then shred it up once it’s done. Back in the day when I sold Pampered Chef, I made these braids and rings all the time. I have not made one in years. Excited to try this one!

Chicken Fajita Chili– I am so excited to try this. I am a little hungry, can you tell? For my kids that will not eat this as is, I will serve it to them over chips with cheese on top and turn it into nachos for them. The rest of us will eat it like chili and I might even make some steamed brown rice to serve it over. My husband loves chili over rice. And he has made me a believer. lol This meal is one of our April freezer meal dinners. So this is in the freezer and all I have to do is thaw and cook.

Baked Spaghetti Casserole with Sour Cream– this is super easy and so delicious. I am going to use ground Italian sausage instead of ground beef. I like to mix it up sometimes. I am going to make cheesy buttery dinner rolls like this.

Grilled Cheese– with chips and fruit. Super easy dinner and actually my 12 year old twins will probably do the cooking.

Chicken and Peppers– served over brown rice made in the instant pot with steamed broccoli. I already have this in the freezer. It’s an easy one to make up and can also be found in our January freezer meal pack.

Leftover Buffet– use ’em up!

 

How I Get Dinner on the Table 

Remember, I am a busy mom just like you. I homeschool, run 2 of my own businesses from home and help my husband run our family business. I also homeschool our children. Meal planning is the only way I get dinner on the table.
