Have you put together your meal plan this week?

We are a family of eight and if I do not meal plan we quickly rack up costs in the drive thru lines.

Here is what large family meal planning looks like at my house.

Large Family Meal Planning

Glorified Bean Burritos- these things are amazing. We made a bunch of them when we did our May Freezer Meal Assembly this month. I am just defrosting them and popping them in the oven on a cookie sheet.

Lentil Tacos– super yummy and easy. I can make the lentil in the slow cooker or the pressure cooker to keep the heat down since it is already very, very hot here in Texas.

Quinoa Taco Salad– refreshing and easy. It’s a great way to use up produce that is in season and it does not heat up the house to make it.

Baked Sausage Pasta with Broccoli– this is one of our freezer meals from the month of May. I will pop it in the oven and serve it with a side salad. So easy.

Red Pepper Chicken– this will cook in the slow cooker. I will serve it over steamed brown rice from the pressure cooker. This is a recipe I make into a freezer meal over and over again because it is just so simple to do. It is also in our 6 Week Freezer Meal Plan ebook.

Leftovers- use ’em up!!


Meal Planning for Breakfast and Lunch 

Here is what we are having for breakfast and lunch this week.




  • Sandwiches x2
  • Hummus and Pretzels
  • Mac and Cheese x 3
  • Crackers, cheese, lunchmeat and fruit
