I’ve shared before that when I create my large family meal plan that I have tons of produce on hand that I need to use up. I have a stockpile of sweet potatoes and carrots. We get a weekly produce delivery and I am just not using things up as fast as I should. I think it is time to move it to an every other week delivery or a smaller box.
All that said, I took a couple of recipes I found online and merged them together and made some modifications and create an amazing slow cooker dinner that was a huge hit. You will love this and it is pretty healthy for you.

Slow Cooker Sweet Potato Chicken
If you're anything like me cheap chicken recipes for a a large family are a certainly a life saver for a busy week night. Easy recipes like this hit the spot for me!
Ingredients
- 6 large chicken breasts (or 8-10 chicken thighs)
- 1 onion, peeled and sliced
- 4 sweet potatoes, peeled and diced
- 4 large carrots, peeled and sliced into circles
- 3 T maple syrupÂ
- 3 T olive oilÂ
- 6 sprigs of fresh thyme
- salt and pepper to taste
Instructions
- In the bottom of the slow cooker add the slices of onion, the diced potatoes and the carrot circles.
- Pour the maple syrup over the carrot, sweet potato and onion mixture.
- Place the chicken breasts on top. Drizzle with the olive oil. Sprinkle with the salt and pepper.
- Lay the thyme sprigs on top of the chicken breasts.
- Cook on high for 6 hours and then leave it on warm until the rest of your dinner is ready.
- I served this with rice. I know... two starches.
- We also made dinner rolls and you could make a salad too.

This sounded really good, but the sweet potatoes ended up very mushy and the chicken was dry, even though I cooked it as the recipe said. Needless to say there was a lot left over the next day. Not wanting to toss it out, I needed to reconstruct this dish. I mashed the sweet potatoes, carrots and onions and added frozen sweet corn; chopped up the chicken and stirred it into the mashed mixture and put it all in a greased casserole dish. Made some stove top stuffing and spread it on top and baked at 350 for 40 minutes. It was delicious and everyone had seconds!
Your variation sounds awesome. What size slow cooker did you use?

Crazy! That is what I used. Ours turned out seriously PERFECT. If your slow cooker is 1/2 full or more this should really eliminate the overcooking which is what dries out chicken. Two thoughts; maybe yours cooks faster than mine does (different brands might be different) next time drizzle a little olive oil over the chicken breasts OR try dark meat.

Can this be left to cook on low for 10-12 hours?
I would try it when you’re at home so you can check on it. Then if you know 10 hours on low did not overcook it, you know it is safe. You just want to be able to keep an eye on it.
Or, buy a programmable slow cooker that will automatically move to warm once the cooking time of 6 hours is over, for example.
Hi! Are you sure your instructions should be 6 hours on HIGH in the slow cooker? I ask because most chicken recipes are 6-8 hours on LOW for chicken and ~3 on HIGH.
After 3 hours on HIGH this recipe was fully cooked for me. I used both sweet potato and white potato – it was good. 🙂
I cooked mine for 6 hours. You know your slow cooker best, though. Different brands can cook differently. When the chicken is cooked through and the potatoes are done it’s time to eat! (Or, you can move it to warm.)

This is a great, easy recipe for weekdays, especially since I almost always have all of these ingredients on hand. Love the little bit of maple syrup for the sweetness!
