Have you ever had roasted bok choy? Oh my goodness! This stuff is amazing and this is a perfect way to use them up if you’ve received these recently in your CSA delivery this is what you should do with them!
I made this on a whim when I realized I had two baby bok choys in my fridge. I needed a quick way to make them.
Since I roasted cabbage last week, and this technically is in the same family as the cabbage, I figured we were pretty safe. (Check out all of my easy recipes while you’re here.)
My husband ate half of what I made. He said it was the best side dish I’ve ever made.
Let me show you how easy it is to make.
Ingredients:
- 2 baby bok choy, cleaned
- 2 T olive oil
- Kosher salt and fresh cracked pepper, to taste
Cover a rimmed baking sheet with parchment paper. This will make for super easy clean up.
Cut the baby bok choys in half, length wise.
Place them on the parchment paper, sliced side up.
Sprinkle them with the olive oil.
Next sprinkle them with Kosher salt and fresh cracked pepper.
Pop them in a 400° oven for about 15 minutes.
They will caramelize on top.
