These cookies might look like a lot of work, but trust me, they’re not!
This red and green pinwheel cookie recipe is so simple to make.
It starts off with an easy sugar cookie base. Then you just need a few extra items and you’ve got a fancy little cookie.
Let me show you how to make these easy Christmas cookies!
You Will Need:
- 1 batch of easy sugar cookies, chilled and split into thirds
- red, green and white nonpareils cookie sprinkles
- red and green icing dye
- rolling pin
- cellophane
- knife
Take one third of the sugar cookie dough and mix 1 t of green icing dye into it.
Use your hands to knead it and combine well.
Do the same for one third of the dough using the red icing.
Next, lay down a sheet of cellophane. Use your rolling pin the roll out one of the thirds of dough.
Lay out another piece of cellophane and do another one of the thirds of dough.
And then repeat for the final third of dough.
Make sure you’re rolling each of them out to be as close to the same thickness as possible.

Decide which color you want to be on the outside. I chose the one batch of dough that is not colored. This is the one you will stack the other two colors on.
Remove the next color of your choice off the the cellophane. We did red.
Then your final color, we did green.
Now you’ve stacked all three layers of dough together.
Use the cellophane sheet the stacked dough is sitting on to roll the dough up.
Pop it in the fridge for about an hour to let it firm back up.
When you take it out of the fridge and unroll the cellophane off of it, this is what it will look like.
Use a knife to slice it as shown below.
Put some of the colored sprinkles into a bowl.
Dip the edges of the cookie into the bowl.
Go all the way around the cookie.
Bake the cookies on a cookie sheet at 350° for 9-11 minutes.
When they are done, this is what they will look like.
Move them to a baking rack to cool and enjoy!
