I’ve shared before that when I create my large family meal plan that I have tons of produce on hand that I need to use up. I have a stockpile of sweet potatoes and carrots. We get a weekly produce delivery and I am just not using things up as fast as I should. I think it is time to move it to an every other week delivery or a smaller box.
All that said, I took a couple of recipes I found online and merged them together and made some modifications and create an amazing slow cooker dinner that was a huge hit. You will love this and it is pretty healthy for you.

Tips For Cooking in the Slow Cooker

Slow Cooker Sweet Potato Chicken
If you're anything like me cheap chicken recipes for a a large family are a certainly a life saver for a busy week night. Easy recipes like this hit the spot for me!
Ingredients
- 6 large chicken breasts (or 8-10 chicken thighs)
- 1 onion, peeled and sliced
- 4 sweet potatoes, peeled and diced
- 4 large carrots, peeled and sliced into circles
- 3 T maple syrup
- 3 T olive oil
- 6 sprigs of fresh thyme
- salt and pepper to taste
Instructions
- In the bottom of the slow cooker add the slices of onion, the diced potatoes and the carrot circles.
- Pour the maple syrup over the carrot, sweet potato and onion mixture.
- Place the chicken breasts on top. Drizzle with the olive oil. Sprinkle with the salt and pepper.
- Lay the thyme sprigs on top of the chicken breasts.
- Cook on high for 6 hours and then leave it on warm until the rest of your dinner is ready.
- I served this with rice. I know... two starches.
- We also made dinner rolls and you could make a salad too.
