Grilled Mediterranean Chicken Recipe
I don’t know about you, but I love Mediterranean food. I could probably eat it every day.
I have a weakness for hummus, actually.
I had some pepperonis, olives and sun-dried tomato basil spread that I wanted to use in different recipes. I thought a grilled Mediterranean chicken recipe would be perfect. We were headed over to our friend Amanda’s house to let the kids play and they were grilling hamburgers. I offered to bring chicken that we could throw on the grill.
This time of year is the perfect time to grill, and I love cooking in foil packets. Chicken Recipes like this are perfect for summertime when you don’t want to heat up the kitchen.
Here is how I made this. It took minutes to prepare and cook and it turned out fabulous!
Ingredients:
- 6 chicken legs
- 6 chicken thighs
- 3/4 c pepperoni slices
- 3/4 c sliced Greek Kalamata olives
- 3/4 c sun-dried tomato basil spread or just sun-dried tomatoes
- 3/4 c feta cheese
- foil
Gather up your ingredients. I used these because I had them on hand from when I made the Mediterranean breakfast sandwich.
Grab a sheet of foil and place 1 chicken leg and 1 chicken thigh in it.
Top with 2 T of the following: pepprocinis, olives, sun-dried tomato basil spread and feta cheese.
Fold the foil packet up.
Repeat until you’ve prepared 6 packets of chicken and spices.
Pop it on the grill for 15-20 minutes or until the chicken is done all the way through.
Take it out of the foil packet and plate it up.
We served this with an easy spinach, strawberry and feta salad with a raspberry vinaigrette. It was what was in the fridge. Super simple!
