Weekly Meal Plan 11

Alright, I’ll admit it. I am not always good at sticking to structure and schedules when something simple like the holidays comes along.

We still cook, some.

We still eat, every day.

But, I do not do such a great job of planning it out when their is a hiccup, like the holidays, in our schedule.

Especially when the two big kids are gone visiting their other parents. As I’ve said before, the joys of a blended family.

My life totally works best when I stick to my plan, or my schedule, or the structure that has been outlined.

So, let’s start this week off with best made plans. Or is it best laid plans? Or is it layed plans? The things that get hung up in my head. I suppose I could Google it, but why?

Here we go!


Dinners:

I only need five meals this week as we will be going to see friends and family for New Years Eve.

Crockpot Asian Fried Chickenthis has become a regular meal at our house. Super simple, super yummy. Tastes just like carry out, but for pennies!

Pinto Beans, Mexican Cornbread and Sausage. I make the beans in the crockpot and add the sliced Eckrich sausage the last hour. Perfect for cold weather! My friend Kim got me hooked on this. Always looking for easy dinners…. gotta brainstorm with your friends!

Cheesy Chicken and Salsa Skillet. This is from the Kraft website. Simple, one dish, meal! We had it at a friends house recently and it was yum! Try it.

Pioneer Woman’s Chicken-Fried Steak, Mashed Potatoes and Gravy. This woman is brilliant and I have yet to try a recipe I did not like. (I gave my mom a signed copy of the cookbook for Christmas as well. It was a tough secret to keep until Christmas, but it was worth it. She had heard me talk so much about this Pioneer Woman, and then when she opened her Christmas gift, it was like she finally got to meet her.) You can click on the mashed potatoes and it will take you to the website for the recipe, but the chicken friend steak and gravy appear to only be in her cookbook. Go buy it, would ya?

Chicken and Penne Florentine– I have not tried this yet. Another simple, one skillet, meal.


Lunches:

No packing lunches this week for school, so here is what we’ve got.

Corndogs (kids love ’em)
Individual deep dish pizzas
Mac and Cheese (so easy!)
Hotdogs
Alphabet Spaghetti O’s.


Breakfast:

Pioneer Woman Cinnamon Rolls (I doubled a batch and used half for my siblings as Christmas gifts. You can read about that here. The other half of the dough is still in the fridge and will keep for 3 days. It should make enough for us to eat a few mornings this week and some that I can freeze.)
Malto Meal (I heart Malto Meal! It is such a feel good food!)
Eggs and Toast
Honey Bunches of Oats or Cheerios
